This recipe is easy to change to fit what ingredients you have on hand. I have adjusted it several times over the years when I didn’t have these exact ingredients. I have tried many different seasonings and flavors, and so far have loved each variation.

Grampa George isn’t actually my Grampa, he’s my ex-father-in-law, but I got used to calling him Grampa when my kids were little. He is absolutely one of my favorite people on this earth!
George taught me this recipe a very long time ago and I used to help him make it at the holidays. I don’t tell him that I change it up when I make it at home and have rarely if ever, stuck to his original recipe. I also don’t get too fussy about how small I dice the ingredients. I have never been overly fussed about perfection because that is the road to true insanity. There ain’t nothing in this life that is ever going to be perfect, and that’s just fine because perfect sounds boring!
It’s adaptable!
When I make this recipe now, I like to add some bell peppers and jalapeno peppers. I also don’t always take time to actually stuff the celery, but use it more as a dip for celery and other veggies. Also, instead of straight sweet pickles, I use spicy sweet or Bread and Butter pickles because if I were to buy plain sweet pickles, they would NOT get eaten at my house. I also like to add cayenne and black pepper because we like spicy stuff over here. When I use this as a cracker spread, I like to add shredded sharp cheddar cheese. There are a LOT of ways to be creative with this recipe and experimenting is fun!
